Belgian Spiced Pecan Waffles

Belgium is famous for its waffles, which can be served for breakfast or as dessert.

Servings: 4

Ingredients:

1 cup plus 1 tablespoon all-purpose flour
1/2 teaspoon salt
2 tablespoons sugar
2-3/4 tablespoons baking powder
1/8 teaspoon grated nutmeg
1/2 cup butter, melted and cooled
2 eggs, separated, at room temperature
2 tablespoons kahlua liqueur
1-1/2 cups milk less 2 tablespoons
1/2 cup chopped pecans

Method:

Sift together the flour, salt, sugar, baking powder, and nutmeg. In a separate bowl, combine the butter, egg yolks, kahlua, and milk. Whisk the milk mixture into the flour and beat until smooth. Let the batter rest for about 30 minutes. Beat the egg whites until stiff, not dry. Fold the egg whites, along with the pecans, gently into the batter. Bake on a non-stick waffle iron.
